Brekkies opened on June 10, 2019. Some say it was the obvious extension of Petersen's other businesses, "The Coffee House by CHOMP" (2017), and the original "CHOMP burgers, fries, shakes" (2011). All three food establishments are family orientated and kid and dog friendly. "The idea behind Brekkies was to offer a fun, family, and reasonably priced breakfast place for locals and visitors alike." "A lot of friends and family kept telling us to open the original CHOMP for breakfast but when this new location came on the market we jumped at it as an offshoot for a CHOMP breakfast place", says Petersen.

A lifetime valley resident, Petersen employs over 50 high school and college-aged kids at his businesses, many having their first job at a CHOMP food business.

The menu was designed to offer some items not found in Solvang, with the kitchen staff putting their own spin on many traditional American and Mexican breakfast dishes. The large patio is a special appeal, with a self-serve coffee bar and large tables for groups. Breakfast beer, wine, and mimosas are available and seem to be a great hit.

Located right across the main street from Solvang Park, the location is easy to find and features a large parking lot on site. Petersen also owns Mortensen's Danish Bakery ( Solvang 1976) along with his brothers and sisters.
